Tuna has always been one of my favorite lunchtime meals. I can remember as a kid having it at my kitchen table. My mom made it with lots of mayo and sweet relish. While that was a classic, these days, I like my tuna a little more sophisticated.
I love that you can add different flavors to it to change it just a bit, but tuna will always have that distinct flavor.
While tuna can be high in mercury, I came across SafeCatch Foods. Their tuna has the lowest mercury of any canned tuna out there. Make sure your checking the mercury levels of your tuna before buying!
I pair mine with some grain-free tortilla chips, some good crunchy raw veggies, or just eat it by itself!
Lunchtime Avocado Tuna
Ingredients
- 3 cans of tuna*
- 1 avocado
- Handful of cilantro torn
- Scoop of capers
- Juice of 1-2 lemons
- 1 bell pepper chopped
- 3 tablespoons mayonnaise
- 3 tablespoons whole grain mustard
- Fresh cracked pepper
- A few shakes of Trader Joe's Everything But The Bagel
Instructions

Mix and enjoy with plantain chips, crackers, or cucumber slices.
