It’s Fiesta in San Antonio, our city’s annual celebration and also one of my favorite times of the year! With parades, parties, school celebrations, and traditions that last two weeks, it’s quickly becoming one of my kids’ favorites as well!
When I moved to San Antonio in 1995 as a freshman in high school, it was Spring Break which meant that Fiesta soon followed. In the first week that I moved, I met the group of friends that I would still call some of my closest friends to this day. It was with those girls that I would attend my first Battle of Flowers Parade and now, years later, would continue to attend only now with our own kids in tow.
Our moms would make “Parade Sandwiches” and it just wasn’t a Battle of Flowers without them. We’ve continued the tradition and realize just how easy they are to make and transport along. Parade Sandwiches are also perfect for a picnic, a trip to the beach, or even just a great dinner for family and friends.
Parade Sandwiches
The perfect food to take to a parade, a picnic, the beach, or even to serve for dinner!
Ingredients
- 1 tray Kings Hawaiian Rolls
- 1 package Sliced Deli Ham
- 1 package Swiss Cheese
- butter
- yellow mustard
- poppy seeds
- 2 green onions
Instructions

Remove rolls from the tray and slice the whole tray of rolls lengthwise.

Spread butter on the bottom layer.

Spread a thin layer of mustard on top of the butter.

Lightly sprinkle the green onions and the poppy seeds on the bottom layer.

Layer ham slices to cover the bread. Follow with a layer of swiss cheese, one more layer of ham, and then one more layer of swiss cheese.

Prepare the top layer of bread like you did the bottom layer and place the top layer back on the sandwiches.

Wrap the entire large sandwich in foil.

Bake at 350 for 20 minutes or until the cheese is melting.

Remove from the oven and cut each sandwich roll with a sharp knife.
