Lunch can be tough as an adult. Whether you are eating at home or eating at the office, it’s easy to get stuck in a rut without a clue of what to eat. This Dill Chicken Salad is easy to whip up as a single serving or in a big batch! The recipe below is for one serving but just double, triple, or quadruple to serve multiple people or to have extra on hand throughout the whole week.
If you are Whole30 or gluten-free, serve with Siete Chips. Otherwise, I’m a big fan of sweet potato chips. This is also delicious on it’s own.
Dill Chicken Salad
This delicious recipe is made for one but double, triple, or quadruple the recipe based on how much you wan tot make.
Ingredients
- 1 cup rotisserie chicken shredded
- 1/2 cup quartered purple grapes
- 1 tbsp diced deseeded jalapeño less for less kick
- 1 tbsp chopped marinated onions No Crumbs Left’s recipe or sub in green onions
- 3 tbsp homemade mayo I like @thedefineddish’s recipe
- 1 tsp fresh dill

Add all ingredients to a bowl and mix. Enjoy with your favorite crackers, chips, atop lettuce, or by itself!
